The Taggiasca olive hails from Liguria and is known for its fruity and delicate nature.  These estate olives were harvested and delivered immediately to a world-class mill. This elegant oil has aromas of sweet almond followed by herbaceous notes of dried thyme and fresh herbs. The pleasant pungency, slight astringency and bitterness create a gentle finish.
