Lime Extra Virgin Olive Oil Cake

Ingredients:

1 C True Olive Connection Lime Infused Extra Virgin Olive Oil, plus a bit more to coat the cake pan

3/4 C Sugar + more for dusting the cake pan

1 1/2 C All-Purpose Flour

1/2 tsp Baking Powder

1/4 tsp Baking Soda

1/4 Salt

3 Large Eggs

3 Tbsp Fresh Lime Juice

Optional garnishes: zest of one lime, powdered sugar

Preheat oven to 350 degrees. Lightly coat a 9" round cake pan with oil and line the bottom with parchment paper. Lightly grease the parchment paper and sprinkle/dust the inside of the cake pan with a bit of the sugar (do not skip this step!) 

In a large mixing bowl, combine the dry ingredients. Make a well in the center of the dry mix. Add the eggs, lime juice and oil (and additional lime zest, if desired). Combine all ingredients until smooth.

Pour the batter into the prepared cake pan and bake for 30-35 minutes, until a toothpick comes out clean from any batter.

Allow to cool 10 minutes in the pan and move to a cooling rack to completely cool before serving. Sift the powdered sugar over the top and sprinkle on any lime zest.
