Olive oil contains polyphenols, vitamin E and other natural antioxidants that are in the oil’s own natural preservatives.  Antioxidants damper the auto-generation of peroxides, delaying the onset of oxidations and rancidity.  As a result, antioxidants increase the oil’s shelf life.
